banana-apple paleo pancakes

i tried this recipe for the first time two weeks ago and, since then, i’ve made it three more times – it’s that effin’ good. plus they are beyond easy… i mean you only need 4 or 5 ingredients to make these puppies. i’ve tried them in a couple different iterations so figured i’d share them here! let me know what you think!

what you’ll need:

  • ripe bananas, 2
  • macintosh apple
  • eggs, 2
  • peanut or almond butter, 2 tablespoons
  • cinnamon
  • a little coconut oil for the skillet

how to make it: i’ve made these a couple different ways but i wanted to share my two favorite variations with you guys: “smashed” and “blended” paleo pancakes.

“smashed“:

  • using a fork, smash bananas in a large bowl; mash in eggs, nut butter, and cinnamon
  • peel and dice apple into small pieces and mix into banana mash
  • heat a small amount of coconut oil in skillet and use tablespoon of batter for each pancake

“blended”: 

  • blend all ingredients in Nutribullet until smooth (you can either peel the apple or leave unpeeled – up to you!)
  • heat a small amount of coconut oil in skillet and use tablespoon of batter for each pancake

enjoy! i’ve served with raspberry compote, syrup, with salted butter, or just plain. the pancakes are delicious without toppings, too!
